In the settings menu, in the phone settings, do you see an option that says, "Call Options"? Go in there and uncheck the box next to "Show Sim Contacts"

I haven't had a Wing myself, but if the Windows Mobile settings screens are similar at all between different phone handsets, then it would [oddly enough] be in there.
